Veggie-Packed Pasta Sauce
Ingredients
2 capsicums
5 tomatoes
400g pumpkin
1 red or brown onion
4 large or 6 average sized garlic cloves
Thyme (fresh or dried)
Extra virgin olive oil
Pinch of salt
Method
1. Preheat oven to 200C.
2. Set up two baking trays with paper. Slice the veggies into halves/quarters and place onto tray.
3. Drizzle the vegetables with a good dose of olive oil followed by the fresh or dried thyme.
4. Place into oven for 30 minutes. Ensure you toss veggies half way through.
5. Take out veggies and allow to cool (if needed). Place into a food processor or blender and pulse until a smooth consistency is achieved.
6. Combine with your favourite pasta, protein of choice and vegetables, e.g. linguine, prawns, broccolini and rocket.
