Garlic Butter and Sage One Tray Chicken Bake

Ingredients 

1/4 Kent pumpkin, cut into 4 chunks

4 red or white potatoes, chopped in half and  hassleback-sliced

250g brussel sprouts, halved

4 chicken thigh or breast fillets (500g raw)

1 red onion, sliced 

20g sage, chopped

50g unsalted butter, melted

1/4 cup extra virgin olive oil

4 cloves garlic, minced

Sea salt

Method

  1. Preheat oven to 200C.

  2. In a large baking tray, add in your chicken and chopped vegetables. 

  3. Melt the butter in the microwave. Add the chopped sage, olive oil and minced garlic and combine. Drizzle over the dish evenly.

  4. Place a sheet of foil over the tray. Bake for 40 minutes covered and then cook uncovered for a further 10 minutes.
