One Tray Quinoa and Halloumi Roast Veg Bake
Ingredients
250g raw quinoa
500mL vegetable stock
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp chilli powder
1/3 cup cranberries
1/2 cauliflower head
750g kent pumpkin, cut into four quarters
2 medium beetroot, cut into small chunks
250g halloumi block, cut 1cm thick
150g danish feta, crumbled
120g fresh rocket, to serve
Method
1. Preheat oven to 200C.
2. Rinse the quinoa and allow any excess water to drain. Add to a large baking tray/ceramic rectangle dish (43 x 25cm).
3. Add the vegetable stock, spices and cranberries to the baking tray with the quinoa and mix with a fork to combine evenly.
4. Lay the vegetables out into the tray over the quinoa. Pop in the slices of halloumi.
5. Cover the tray with foil and bake in the oven for 25 mins.
6. Take off the foil and bake uncovered for a further 15-20 minutes.
7. Take out of the oven and allow to cool. Top with crumbled feta cheese and serve with rocket.
