Mini Mexican Taco Cups

Ingredients
500g 5 star beef mince
1 medium carrot, grated
1 small zucchini, grated
1/2 brown onion, finely diced
1 clove garlic, crushed
2 tbsp tomato paste
1 tbsp Masterfoods Mexican spice mix
1 tsp chilli powder (optional)
4 mountain bread rectangle wraps
1 egg, whisked
1 cup grated lite cheese
For the guac
1 avocado, mashed
1/4 red onion, finely diced
1/2 tomato, finely diced
1 tbsp finely chopped coriander
Juice from 1/2 lime
Salt and pepper
Method
Preheat oven to 180C.
Splash 1 tbsp olive oil in a pan on medium heat. Add onion, garlic, Mexican spice mix and chilli powder and cook until onion is slightly brown.
Add in the beef mince and stir through the onion and flavourings.
Add in the tomato paste, grated zucchini, grated carrot and continue cooking on heat until the mince is cooked through.
Slice the mountain bread wraps into quarters.
In a normal-sized muffin tray, line each cup with a quarter of the wrap bread. Quickly paint the wrap bread with whisked egg.
Add about 1/4 cup mince mixture to each wrap cup. Top with the grated cheese and pop in the oven for 10 minutes.
Combine the guac ingredients together in a small bowl.
Once the cups are done in the oven, take out and top with the guac and chopped coriander.
