Burrata Salad with Toasted Wrap Bread
Ingredients
1 250g punnet cherry tomatoes, cut into quarters
1 small Lebanese cucumber, cut into quarters
1 small red onion, chopped
1 bunch basil, roughly chopped
150g burrata
Zaatar or mixed herbs
Dressing (optional- also tasted great without)
Juice of 1 lemon
1 tbsp extra virgin olive oil
1 tsp balsamic glaze
Sprinkle salt and pepper
Toasted wrap bread- can also do toasted baguette or sourdough
4 wholemeal wrap breads
2 tbsp extra virgin olive oil
1 clove garlic, crushed
Sea salt
Method
For the toasted wrap bread, combine the olive oil and garlic in a ramekin. Brush over the wrap bread and sprinkle some sea salt on top. Slice into 8 pieces and toast in an airfryer or in an oven at 200C for 5 minutes or until toasted.
Combine dressing ingredients in a jar or small bowl.
Combine the chopped cucumber, red onion, cherry tomatoes and basil in a bowl. Pour over the dressing ingredients and toss.
Add the burrata on top of the salad. Sprinkle with zaatar or mixed herbs (optional).
Pop the burrata and serve by itself as a salad or with toasted bread like a bruschetta.
