Burrata Salad with Toasted Wrap Bread

Ingredients

1 250g punnet cherry tomatoes, cut into quarters

1 small Lebanese cucumber, cut into quarters

1 small red onion, chopped

1 bunch basil, roughly chopped

150g burrata

Zaatar or mixed herbs

Dressing (optional- also tasted great without)

Juice of 1 lemon

1 tbsp extra virgin olive oil

1 tsp balsamic glaze

Sprinkle salt and pepper 

Toasted wrap bread- can also do toasted baguette or sourdough

4 wholemeal wrap breads

2 tbsp extra virgin olive oil

1 clove garlic, crushed 

Sea salt

Method

  1. For the toasted wrap bread, combine the olive oil and garlic in a ramekin. Brush over the wrap bread and sprinkle some sea salt on top. Slice into 8 pieces and toast in an airfryer or in an oven at 200C for 5 minutes or until toasted.

  2. Combine dressing ingredients in a jar or small bowl. 

  3. Combine the chopped cucumber, red onion, cherry tomatoes and basil in a bowl. Pour over the dressing ingredients and toss.

  4. Add the burrata on top of the salad. Sprinkle with zaatar or mixed herbs (optional).

  5. Pop the burrata and serve by itself as a salad or with toasted bread like a bruschetta.
