Honey Soy Tofu Salad

Serves 1

Ingredients

100g Pre-marinated honey soy tofu (Woolworths homebrand or SoyCo)

40g dry weight vermicelli rice noodles

Butter lettuce

Thinly sliced red cabbage

Sliced capsicum

Sliced cucumber 

1 sliced green onion

Dressing

1 tsp honey

1 tsp soy sauce

1 tsp sesame oil

1 tsp white wine vinegar 

1/2 tsp sesame seeds 

Method

  1. Boil a small pot of water. Add in the vermicelli rice noodles and cook to packet instructions. 

  2. Lightly spray a fry pan on medium heat with olive oil. Add in the tofu and cook on each side until brown (about 5 minutes each side).

  3. Prepare the veg- slice thinly and toss together in a bowl.

  4. To make the salad dressing- combine ingredients in a small mixing bowl/jar and shake. 

  5. Add the cooked noodles and sliced tofu on top of the salad. Pour over the dressing and top with sliced green onion.
