Macadamia and White Choc Chip Cookies
Makes 10
Ingredients
1.5 cups wholemeal plain flour
1/2 cup brown sugar
1/3 cup white choc chips
1/3 cup chopped macadamias
2 eggs, whisked
1/4 cup extra virgin olive oil
2 tsp vanilla essence
1 tsp baking soda
1 tsp baking powder
Method
Preheat oven to 180C.
In one mixing bowl, combine dry ingredients (flour, sugar, choc chips, macadamias, baking soda and baking powder). Combine all wet ingredients in a separate mixing bowl (whisked eggs, olive oil, vanilla essence).
Combine the wet and dry ingredients and form a dough.
Line a baking tray with paper. Roll the dough into balls, place on the tray and flatten, ensuring 4-5cm of space between each cookie.
Lightly sprinkle with sea salt flakes (optional) and place in the oven for 10-15 minutes or until slightly brown and crunchy.
