Macadamia and White Choc Chip Cookies

Makes 10

Ingredients

1.5 cups wholemeal plain flour

1/2 cup brown sugar 

1/3 cup white choc chips

1/3 cup chopped macadamias 

2 eggs, whisked 

1/4 cup extra virgin olive oil 

2 tsp vanilla essence

1 tsp baking soda

1 tsp baking powder

Method

  1. Preheat oven to 180C.

  2. In one mixing bowl, combine dry ingredients (flour, sugar, choc chips, macadamias, baking soda and baking powder). Combine all wet ingredients in a separate mixing bowl (whisked eggs, olive oil, vanilla essence). 

  3. Combine the wet and dry ingredients and form a dough.

  4. Line a baking tray with paper. Roll the dough into balls, place on the tray and flatten, ensuring 4-5cm of space between each cookie.

  5. Lightly sprinkle with sea salt flakes (optional) and place in the oven for 10-15 minutes or until slightly brown and crunchy.
