Healthier Spinach and Cheese Triangles
Makes 24 triangles
Ingredients
8 sheets filo pastry (or 16 if you want to use 2 sheets at a time for a thicker pastry)
200g feta
500g lite cottage cheese
75g frozen spinach, thawed
1/2 brown onion, chopped
2 garlic cloves, crushed
1/2 tsp coriander
1/4 tsp cumin
2 eggs, whisked
1/4 cup sesame seeds
Method
Preheat oven to 180C.
Thinly chop the brown onion.
In a pan on medium heat, add a small drizzle of olive oil, the sliced brown onion, crushed garlic, coriander and cumin and sautee until lightly brown.
In a large mixing bowl combine the feta, cottage cheese, onion mix and thawed spinach.
To make the triangles: lay out one sheet of filo pastry at a time. Slice into three strips lengthways. Lightly brush each strip with the whisked egg. Place 1 spoonful of mixture in the corner of the strip. Fold the bottom left corner in to make a triangle shape. Fold the triangle up (so that it flips). Fold the bottom right corner of the triangle over to the top left corner. Continue until triangle is fully folded.
Once folded, pop the triangle onto a baking tray lined with paper. Brush the triangles with whisked egg and sprinkle sesame seeds on top.
Place in the oven for 20 minutes. Wait 5 minutes for the middle to cool before serving. I find tzatziki dip goes well as a sauce with a Greek salad on the side.
